After a busy day, it's easy to reach for convenience when it comes to dinner and that's ok as long as you're making healthy choices. For days where you want to make something delicious without the guilt of calories why not try our healthy Thai green curry recipe.
Thai Green Curry
Time: prep 10 minutes cooking time 15 minutes
Serves: 2
Ingredients
1 teaspoon of olive oli
1 onion
1 red chili (remove seeds for less heat)
3 tablespoons thai green curry paste
5cm sized piece of ginger (grated)
300g of chicken, prawn, any lean meat or chickpeas
3 large handfuls of spinach
1 head of broccoli (cut into small pieces)
1 400ml tin of light coconut milk
1 teaspoon of fish sauce
1 lime (zest and juice)
1 large handful of fresh coriander
To serve
Fresh coriander
Boiled white rice
Steamed vegetables (optional)
Method
Prepare and cut all ingredients. Heat the oil in a large pan or wok and fry your onion on a medium heat for around 5 minutes, until soft. Add the thai green curry paste, the ginger and chili and cook for a further minute.
If using chicken or any other lean meats add these now.
Add the broccoli and stir well. Cook for a further 3 minutes.
Pour in the coconut milk, bring to the boil and then down to a simmer for 5 minutes, stiring occasionally.
If using prawns add these now along with the spinach, lime zest and juice, fish sauce and coriander and mix well.
Serve with rice, veg and extra fresh coriander.
